  1. 1.5 litre full fat milk
  2. 1 cup basmati rice
  3. 500 gms sugar
  4. 2 green cardamom powder
  5. 10-15 strands kesar
  6. 10-15 almonds or pistachios or both

  1. Soak rice for 30 minutes.
  2. After 30 minutes strain the rice and grind till it's broken rice not powdered.
  3. Soak the broken rice in 1 cup milk mix properly and keep aside.
  4. In a thick bottom pan take milk and let it boil, allow it to cook of low medium flame stirring in intervals.
  5. Once milk is reduced by 25%, add soaked milk and rice and stir nicely to avoid lumps and sticking at bottom.
  6. Continue to cook on low medium flame stirring in 3-4 mins interval to avoid sticking in bottom.
  7. Cover the pan with half lid, after 15 to 20 minutes rice will be cooked, add kesar strands and cardamom powder and stir properly.
  8. Continue to cook and stir till milk takes kesariya color, now add sugar and mix and allow to cook.
  9. Once sugar melts add chopped almonds and pistachios.
  10. After 3-4 minutes you will get phirni consistency, put off the flame and garnish with chopped almonds or pistachios.
  11. Enjoy hot or cold or even at room temperature 😊
