- Soaking lentils : Firstly wash and soak rice, moong dal, few fenugreek seeds and urad dal for 6 hours. After 6 hours drain water from it.
Grinding lentils : Take a mixer jar add all the ingredients If you need then add little water and make a smooth but thick batter. Keep aside for 7-8 hours for fermentation process. - For tempering process : heat oil in saucepan, add mustard seeds and allow to splutter. Then, mix chopped ginger, green chilli, curry leaves, cashews and roast till cashews turns light golden color.
- Further, add grated carrot and chopped coriander leaves and give a good stir to all the ingredients. And add this tempering to batter. Add salt and gently mix it.
- Now, take a steamer add water on bottom and heat it. grease idli plates with oil. Add a ladle of batter to each idli mould. Steam it for 20 minutes on medium flame.
- Allow steam to fully release. And cool off for some minutes and then using spoon take out idli from mould.
- Finally, serve it with sambhar, coconut chutney or green chutney.
